Slow smoking meats is more often considered real BBQing, but high temp grilling is done more often and thought of by more people to be BBQing.
What kind of BBQing do you usually do? Are you a griller or a smoker??

Thu, January 29, 2004 - 1:17 PMNo question here - REAL BBQ is done slowly, with smoke, and indirect heat. Fat dripping on hot coals gives a bitter flavor, but that's OK for the short cooking times when grilling. I love a good crispy grilled steak, but for that to-the-bone flavor and tenderness, it has to be smoked. Slowly.

I cooked a rack of ribs once for an hour or so off to the side of my coals, and that was pretty damn good. So I would definatly love to get into smoking, but for some reason I don't see myself being "into" that as much as direct grilling. -

Fri, January 30, 2004 - 12:15 PMI used to be a big griller, but started trying smoking with my Weber kettle by putting the coals in a line in the middle and meat off to each side. Found I could get pretty darn good ribs with throwing soaked hickory (and my favorite, cherry) chips on the coals and letting them cook with the top vent abuot half open for two hours. The Weber could make 2-2 1/2 hours on one batch of charcoal. Then I tried a turkey using the indirect method (coal side rails) in the Weber book, and I was hooked! -

Mon, June 28, 2004 - 10:54 PMI'm a smoker. Just moved into a new place with a backyard and bought a Weber smoker. Ribs, chicken, pulled pork and soon I'm going to try making a pastrami. Smoking is definitely the way to go.

grill tri-tips & damn fine steaks...
slo-mo chicken for 3hrs over mesquite in a homemade pit is my fav.
Also pork hunks/riblins are mighty fine over the mesquite... just takes a long slow smoke... -

Sometimes you gotta grill, then there are times you gotta smoke. I smoke big chunks of meat and grill smaller pieces. -

Fri, August 27, 2004 - 9:03 AMYeah, this is a good rule of thumb. Bigger pieces of meat are better slow cooked. My favorite on the smoker has got to be leg of lamb. Apple wood chips with a bowl of water, wine, garlic and herbs and the lamb has been stuffed with garlic and rosemary. Let smoke for aout 4-5hours. MMmmmmMmmm. -

Mon, November 28, 2005 - 12:13 PMI'd have to say both, but I'm probably more of a smoker.
In fact, I smoked a 12 pound whole turkey for Thanksgiving and it was honestly the best way I've ever prepared turkey. I brined it for 24 hours before and then made a rub for it that I put on right before it went on the smoker. After the first two hours I sprayed it down every 30 minutes with a 2 parts apple juice, 1 part beer, 1 part olive oil mixture. It took about 5 hours to cook at approx 275-300 degrees and it came out golden brown and very, very juicy with a smoky flavor that couldn't be matched with oven roasting.
I used natural lump charcoal and 3 chunks of apple wood.
Can't beat it for the flavor. -

i took a blind shot at barbequing/grilling/smoking a ten pound ham on saturday.
first, i warmed it to a temperature of 120 in my oven, then cut the ham in half and finished them off in my two little covered sunbeams. i pushed all of the coals in the little smoker grills to one side, and laid a foil drip pan on the other side and let the pig butts hit one sixty on the meat thermo, and served em up to our guests. oh yeah, i added a shredded pineapple/brown sugar glaze to the halves about twenty minutes before they were done.
i guess i did it right, 'cause the whole thing got eaten up in no time flat!
i pretty much liked the way a 'qued up ham tstes, too!
so folks, did i go about this in more or less the right way?
i had to cut the thing in half, because my sunbeams are the tinny little hibachi-style things, about six inches deep with a twenty four by ten grilling surface i'm thinking of cooking a prime rib, or a pot roast the same way sometime soon.
any suggestions?

Tue, November 29, 2005 - 10:19 AMI used about 20 lbs of charcoal, but that probably filling my smoker one and a half times. Usually I fill it every 3-4 hours depending on the weather, etc...
Speaking of charcoal the best advice I've ever gotten in terms of BBQ is to use natural lump charcoal rather than a brand such as Kingsford especially if it's the kind that contains lighter fluid....natural lump burns much cleaner and is about the same price. Chemicals like lighter fluid change the taste of whatever you are smoking. It's best to go natural, or at least that's my opinion for smoking.

I'll be grilling some boneless ribs this weekend. Marinade them first, I do beleive.
